 Coconut Aloo Dum




Ingredients

Potato 500 g medium size, onion 2 medium size, Coconut ½, Garlic Ginger paste 1 tbs each, fresh coriander ½ cup, tomato 2 medium size, green chilli 4.
Red chili 3, green cardamom 3, cloves 3, cinnamon stick 2 Inch, black pepper Cumin Corriender powder 1 tps each, Curd ½ cup, gram masala powder ½ tps, black Cumin 2 tps.
Cooking Oil 4 tbs, salt 1 tbs or to taste.

Process: 

Wash potatoes and pressure Cook for one whistle, cool it, remove the skin, cut each into two parts. Keep aside.
Cut onions finely
Cut coconut in small pieces, put in mixi and grind them to make coarse paste.
Cut tomatoes into small pieces
Cut green chilli roughly
Cut fresh coriander roughly
Whipped the curd with a spoon, keep aside.

Take 4 tbs oil in a pan, heat the pan until oil release smoke, add one tbs salt to hot oil, stir it well, now fry cut potato pieces in oil in medium flame until golden, take-out from pan and keep aside.
Add chopped onion to pan, stir it cook it for 5 min, then add Black Cumin seed, broken red chhili, green cardamom, cloves, cinnamon stick to this, cook them until onion get soft, add chopped tomatoes, cook for another 4 min, now add garlic ginger paste, Corriender Cumin Black pepper powder to this, stir them and cook this until raw smell gone ( add small quantity of boiled water if spices sticks to base) , now add cut green chilli, fresh coriander, whipped curd and coconut paste the pan, mix well with spices and cook for another 5 mins in medium flame, now add potato pieces stir them to mix spices with potaoes, add garam masala powder, cook for 2 to 4 min once the oil release then add 1 Cup boiled water to this, cover it, cook in medium flame until this to thick gravy and potatoes to soft. Now turn of flame and transfer this to a serving bowl.
Coconut Aloo Dum is ready to serve, take this with Paratha, flat bread or with puri.
