Chicken Kofta Curry/ Chicken Meat Ball Curry


Ingredients: 


For Chicken Ball: Boanless Chicken 500g, 1 Large Size Onion Roughly Chopped, Garlic Paste 1 tsp, Ginger paste tsp, fresh Corriender finely chopped 3 tbs, 4 green chili finely chopped, Cumin Powder 1 tsp, Corriender powder 1 tsp, black pepper powder 1 tsp, garam masala( Green cardamom, Cloves, Cinnamon stick) powder ½ tps, one Egg, 2 tbs roasted gram flour, Mustard oil 2bs, Salt to taste.


For Curry: two medium size Tomato Paste, two medium size onion finely chopped, 4 green chilli roughly chopped, Ginger paste 1 tsp, Garlic 1tsp, Cumin Powder 1tsp, Corriender powder 1tsp, Black pepper powder 1tsp, red chilli powder 1 tbs, Termaric powder 1 tsp, plain curd 4 tbs (whipped), fresh coriander finely chopped, 4 tbs Mustard oil or Deshi Ghee, 2 green cardamom, 4 cloves, 2inch cinnamon stick roughly broken, salt to taste, garama masala powder ¼ tsp.

Process: Cut chicken roughly in small pieces to make chicken mince. Put the chicken mince in a mixi and grind for few minutes. Now in pan add 1bs oil and fry the onion until golden brown, let it cool and crush it and mix with chicken, add 1 tsp mustard oil and other ingredients with the grinded chicken in a mixing bowl, mix it well by hand. 

Now greese your hands with Mustard oil and take Table spoon full of chicken mix and roll it by hand to give a round shape, Make chicken balls with chicken mix and keep those in plate, cover it and leave it in friedge for an hour or little more.

Add oil or ghee in a pan or Kadai heat it until it leave smoke, then keep the flame medium to low. Now add Green cardamom, cloves cinnamon stick to oil and fry for few seconds, then add tomato paste stir it well until it change colour, then add chopped onion and pinch of salt, fry it few minutes until it soft and release sweet smell of onion, then add whipped curd and chopped green chhili, mix it well, now add all other spices one by one, mix it well and add some chopped fresh coriander, cook it in low to medium flame until oil separates. Once oil separates and you get some good aroma from the pan, then add 400ml or two cups of hot water to pan and allow it to cook for 5 mins. After five min keep the flame to low and slowly add chicken balls to the gravy one by one. Cover it and Allow this undisturbed to cook for 10 mins in low flame (do not use any spoon to stir it). After 10 min with a spoon change the side of Koftas/ Chicken balls carefully and allow another 5 mins to cook. After 5 min cook this in medium to high flame for 5 mins, check and add salt to your taste. Next allow it to cook undisturbed in low flame until oil float. Put off flame and add ¼ tbs garama masala powder and cover it.

Finally transfer this to a service bowl and garnish with freshly chopped coriander.
