 Smoky Grilled Chicken in Spicy Gravy




Ingredients: Chicken 500g boneless.

For Chicken Marination: salt 1tsp, lemon juice 2 tbs, olive oil 2 tbs ( you can use any Vegitable oil), curd 4 tbs, Black pepper powder 1 tsp, Ginger Garlic paste 1 tsp each, cumin coriander powder ½tsp each, green chili 2 finely chopped, fresh coriander finely chopped 2 tbs.

For Gravy: curd 4 tbs, cashew nut 10, green chilli 4 chopped, onion 2 medium size chopped, Fresh Corriender chopped 2 tbs, tomato 1 medium sized chopped, Termaric powder 1 tsp, red chilli powder 1 tbs, coriender Cumin powder 1 tsp each, Black pepper powder 1 tsp, garlic ginger paste 1 tbs each, roasted Fenugreek leaves 1 tsp, fresh cream 3 tbs, butter 1 cube 1 inch, 2 green cardamom, 4 cloves, cinnamon stick 2 Inch broken. Salt to taste, oil 4 tbs.

For smoke: charcoal and Deshi ghee 2 tsp.

Process: cut the chicken in cubes and take in a bowl. Add lemon juice and black pepper powder to chicken and mix them well with chicken, now add all other ingredients to chicken one by one and mix with chicken. Cover this and Keep it in refrigerator for atleast 2 hours ( over night Marination is recommended for better result)

Now take out the chicken and take in skewers. Heat a pan, keep the skewers on pan and grill the chicken in high flame for 3 to 5 mins each side or till grill mark on chicken. Remove grilled chicken from skewers and take in a bowl. Put a small size metal bowl or aluminum foil in Grilled chicken, now burn a piece of charcoal and keep on small metal bowl, add deshi ghee to burn charcoal and cover bowl and leave this for 30 min.

Take Cashew nuts and curd in a mixi, grind them to make a fine paste.

Take a pan add oil to this, heat the pan until smoke released. Add Green cardamom, cloves, cinnamon stick to hot oil and stir this for few seconds, now add chopped tomatoes this in medium flame for 3 mins, then add chopped onion to this and little bit salt to this, stir them until onion get soft, once the onion get soft now add garlic ginger paste, stir and cook this in medium flame for 3 to 5 min, then add cumin coriander powder, Termaric powder, red chilli powder, chopped green chilli, Chopped Corriender, Black pepper powder, mix the all ingredients and stir and cook for 5 min in medium to low flame, then add curd cashew nut paste and stir this well for 3 to 4 mins in medium flame. Now add smoked flavoured chicken in gravy, add roasted Fenugreek leaves, mix all with the gravy, stir it and allow it to cook until oil separated or float on top of the gravy, now add cup (300 ml) hot water to this, cook it and wait until the gravy is thickened, now add fresh cream and stir it well to mix with gravy and cook this for another one to two min maximum. Turned off oven and cover it.

Smoky Grilled Chicken in Spicy Gravy is ready to serve, take this with any kind of flat bread or with simple boiled rice or with any rice preparation.
