Roasted Garlic Thyme Soup
Ingredients: Garlic 20 cloves, Onion 1 medium size, tomato 1 small size, Dry Thyme 1 Tbs, cornflour 1½ tsp, green chilli 1, fresh coriander chopped 1tbs, olive oil ( or any Vegitable oil) 1 tbs, black pepper powder 1 tsp, salt to taste, butter cubes.
Process: cut onion finely, cut the tomato in small pieces discard seeds, chopped green chilli roughly.
Dry roast half part of garlic, cool it and remove skin and chopped roughly, and remove skin from others garlic cloves and chopped them finely.
Take cornflour in a medium bowl, add some warm water to this, stir this well to dissolve in water.
Take a pan, add oil and heat the pan until oil release smoke. Now add freshly chopped garlic to oil,
and saute till colour changed, now add onion to this, add ½ tsp salt and saute till onion
translucent, add tomato pieces and chopped
green chilli saute for sometime, then add dry thyme to this and stir them to mix well and to fry little bit and chopped roasted garlic and mix with them
( Cook this in medium flame)
Now stir cornflour mix well and transfer this to pan,
stir well and careful this not stick to base of pan. Once the mix get thick add 600 ml warm water to this,
stir it continuesly, add salt to your taste and cook in medium flame for 5 to 8 mins. Put off the flame,
tranfer this to bowl, add chopped coriander and black pepper powder to this, cover it and leave it undisturbed for 5 min.
Stir it well and serve this with a ½ inch butter cube.
( As you are going to serve this with a piece to butter cube so remember adding salt while cooking)
