Medu Bada/ White Lentil Doughnut
Ingredients: Urad dal/ white lentil 250g, Ginger 1 inch, Green Chilli 4, black pepper 10 corn, Tomato 1 medium size, Onion 1 medium size, curry leaves one, fresh coriander chopped ¼ cup, salt to taste and oil to fry, baking soda ⅕tsp.
Process: Soak Urad dal/ white lentil 6 hours or overnight in water. Discard water and take in grinder, add two green chilli, piece of ginger in grinder, grind them to make make all most fine paste ( not to smooth textured paste) add very litle much of water maximum ½ cup( we not need any thin batter), transfer this to a Bowl. Break black pepper corns to coarse piece, mix to Urad dal mix, add 1 tsp salt ( or to your taste), whipped this by hand or with a spoon well to make it light and fluffy. Take some water in small bowl and give a little amount of dal mix to water, if that floats then it's became light and fluffy, else whipped for some time more.
Now chopped the onion and Tomates roughly, discard the seeds of tomatoes, cut the green chilli and curry leaves in small pieces.
Take a deep pan and pour some oil for deep frying. Allow the oil to heat until smoke release. Bring down the flame to low.
Now add chopped coriander, Onion, tomato, green chilli, and curry leaves and baking soda to dal mix and mix them well. Mix them just before frying them else those can realese water and would make your batter thin.
Now soak your palm with water, take a spoon full of batter on palm, press to make round and press middle of the batter by a finger to make a hole then carefully transfer to hot oil, follow this for left batter to, fry them half to chane color. Bring them out from oil and put on tissue to absorb extra oil from their side. Keep them aside and fry the other badas.
Before serving, heat the oil and fry the half fried badas, fry them till the colour change to gloden brown. Bring them out from oil and serve with chutney or Shambar or with Yellow Pea Curry.
