Chicken Boti Kebab in Clay Oven
Ingredients: Boneless Chicken 1kg, Lemon Juice 3 tbs, Curd 1 Cup ( 200g), Oilve oil 4 tbs, green chilli 6, Coriender Cumin powder 1 tbs each, Black pepper powder 1 tbs, Garlic Ginger paste 1 tbs each, cashew nut 15 pcs, Salt to taste.
Vegitable oil to brush on kebab.
Red and Yellow Bell Pepper, Tomato 2 medium size, One large size onion.
Process: cut the chicken in medium size cube, put in a mixing bowl, add lemon juice and olive oil to chicken, mix them well with chicken.
Take Green Chilli, Curd, cashew nut, cumin coriander Black pepper powder, ginger garlic paste in a mixi, grind and mix them to make a fine paste. Now transfer this paste to chicken add salt to taste, mix with chicken well. Cover it and keep in refrigerator for two hours ( over night Marination recommend).
Cut the Bell Pepper, Tomato and Onion in one inch square, sprinkle litle salt black pepper powder and lemon juice on them.
Take metal skewer, and organize chicken bell pepper, tomato, Onion pieces in skewers. Brush oil on them ( you can use melted butter, then adjust salt in Marination)
Arrange fire in clay oven or coal oven. Hold the skewers direct in oven flame for 5 mins, and brush the oil again and hold on flame to roast for 3 to 5 min.
Chicken Boti Kebab is ready to serve, remove from skewers and serve
