Egg Maharani Recipe
Maharani Egg
Ingredients: Boiled eggs 8 to 10, 2 medium size onion, Ginger 1 inch, Garlic 10 to 12 cloves, green chhili 4 (diced), dry red Chili 4, whole cumin seed 1 tsp, whole Corriender seed 1tsp, Black pepper corn 10 pcs, ½ tsp fennel seed, 2 inch mace, ¼ part of a Nutmeg, 4 green cardamom, 4 cloves, 2 inch cinnamon stick, 1 tbs french Corriender finely chopped, 3 tbs frash cream, 8 to 10 cashew nuts, curd 3 tbs, oil 3 tbs, salt to taste, Fenugreek leaves 1tbs.
Process:
Boil the eggs and make few Slit mark to the eggs upto yolk that salt and spices can enter.
Cut onion roughly, chop ginger and garlic roughly, put all them in a mixi and make a fine paste of onion garlic ginger.
Take Cumin, Corriender, Black pepper, dry red chilli, fennel seed, green cardamom, cinnamon stick, cloves, mace and nutmeg in pan, dry rost them 15 to 20 second or until aroma come from them, do not roast them much or not allow them to change colour. Cool them, put in mixi, grind them allmost to a fine powder, keep them covered to arrest their aroma.
Take spoon full of Fenugreek leaves on a pan dry roast it for few seconds don't allow them to change colour. Cool it and crush them by hands.
Soak Cashew nuts in plain water for half an hour then put the cashew nuts in a mixi add curd to this and make a fine paste of cashew and curd.
Take oil in a pan, allow oil to release smoke, keep flame low to medium. Add onion garlic ginger paste and diced green chilli and fry them until raw smell go. Add eggs to this, mix the fried spices to all over eggs, now add curd cashew nuts paste to this stir this well. Now add the fried spices powder (keep one tsp fried spice powder aside for future use). Cook this in medium flame, add water if spices stick to pan, cook them until it release oil by side, add cup of water and salt to taste to this, add roasted crushed Fenugreek leaves to this. Allow it to cook till it become a thick gravy. Now add fresh cream to this, stir it and cook for another 2 min. Now turn off flame, transfer this to serving pot, spread fried spices powder, fresh coriander and spoon full of cream to this, Cover this and serve after five minutes with any rice preparation or with plain rice.
