Smoky Flavour Cottage Cheese Gravy
Ingredients: Paneer/ Cottage Cheese 250g, Lemon Juice 2 tbs, Olive oil 2 tbs, Termaric powder 1 tsp, Red chili powder 1tbs, coriender Cumin powder 2 tsp each, Black pepper powder 2 tsp, Garlic Ginger paste 2 tsp each, Tomato paste 2 tbs, onion one medium size, cashew nut 8, almond 8, green chilli 2, Kasoori methi (Fenugreek leave dried) 1tsp, fresh coriander 1tbs chopped, green cardamom 2, Cloves 3, cinnamon stick 2 broken, Vegitable oil 2 tbs, butter cube 1 inch, salt to taste, deshi Ghee 1tsp, piece of charcoal.
Process: Cut the cottege cheese in cubes ( approx 1 inch)
Take lemon juice, Oilve oil, ½ tsp salt, 1tsp cumin powder, 1 tap Corriender powder, Garlic Ginger paste 1 tsp each, 1tsp Black pepper powder in a mixing bowl and mix all these together. Now transfer the Cottege cheese cube in this spice mixture, all the panner cubes should covered with spice mixture well. Leave it aside for 30 min.
Now prepare the spices for gravy
Soak the cashew nuts and almonds for some time, remove the skin from almond (optional). Take these in a mixi add green chilli to this and grind them to make a fine paste.
After 30 min take spiced marinated Paneer cubes in Skewers ( better use metal) and roast them over direct Gas flame till little black burn mark seen on sides, remove all the roasted panner cubes in a bowl.
Now burn a piece of charcoal and put in this bowl on an aluminium foil add deshi ghee on burn charcoal to smoke, cover this, leave it and let's go prepare the gravy.
Take pan, add oil to this, heat the pan until smoke from oil, add Green cardamom cloves cinnamon stick to oil, fry them for few seconds in medium to low flame. Add tomato paste to this stir this and cook for 2 min in medium flame, cut the onion and add to pan, stir this and add little quality of salt to soften the onion faster, now add garlic ginger paste to this, stir and cook until raw smell of Garlic ginger gone. Now add Cumin, Corriender, Black pepper, turmaric, red chilli powder to this mix the all ingredients well and stir and cook for some time in medium to low flame, now add dried Fenugreek leaves to this, mix them and stir well that no spice stick with pan. Now add cashew almond Green Chilli paste and fresh coriander to this and the piece of butter, mix them well and cook in medium flame and stir them. Once the oil release from the spices add 200 ml hot water to this, check the salt and add salt if needed. Once the boil come trasfer the smoked panner to the pan and cook in medium flame for another 5 minutes or till it become a thick gravy.
Transfer this to serving bowl, serve this with rice preparation or any kind of bread.
